​​​Stuffed Chicken Breasts​ filled with Cream cheese, Mozzarella and Mixed Greens

Living in southwest Arizona allows for outdoor grilling almost year round. What's wonderful about that is Robert, my husband a.k.a. Foxy Cuisine's VP loves to grill. We work the prep and do the grilling together. It's quite the tag team effort and this lovely stuffed chicken is one of our new Foxy Cuisine Original Recipe favorites. Filling the chicken breasts and cooking them over a charcoal grill creates this wonderful, moist and flavorful feast.

PREP TIME: 20 Minutes COOK TIME: 20 Minutes


  • 2 Chicken Breasts 6 oz. each – 562 Calories
  • 2 oz. Mozzarella, Shredded – 170 Calories
  • 2 oz. Cream Cheese – 200 Calories
  • ​3 Tbsp. Zesty Italian Dressing – 210 Calories
  • 2 Cups Mixed Greens, Chopped – 19 Calories
  • ​1/2 tsp. Black Pepper - 3 Calories
  • ​3 Tbsp. Lemon Juice - 21 Calories

SERVES 2:  593 Calories per Serving


  1. Marinade chicken in 2 tablespoons of zesty Italian dressing for 20 minutes.
  2. Butterfly each breast to allow for stuffing mixture.
  3. Process mixed greens into finely chopped pieces and add to a medium sized bowl
  4. Add cream cheese and mozzarella to bowl and stir until thoroughly blended.
  5. ​Fill both breasts with the cheese and mixed greens mixture.
  6. Seal chicken breasts with wooden toothpicks. 
  7. Mix black pepper and lemon juice with 1 tablespoon of zesty Italian dressing in a small bowl.
  8. ​Brush each side of chicken breasts with dressing mixture.
  9. Charcoal grill with cover down over direct heat for 10 minutes a side.
  10. Plate and drizzle remaining dressing mixture over the top of each breast.

NOTE: May be completed in oven at 350°F for 30 minutes.
