Oh potato, how much you have suffered from the anti-carbohydrate diet phenomena. You got a really bad rap and millions left you behind believing that potatoes equal packing on the pounds. But you are actually packed with vitamins, minerals, and phytochemicals which have protective and disease preventive properties.


Therefore Foxy Cuisine fans, if you've been avoiding them, it might be time to start dating again. This break up has lasted way too long and the tubers forgive you. The old spuds still love and miss you. Here we're matching them up with olive oil and sweet yellow onions.


For those who have never given up on potatoes during those dark and misinformed years, your long term devotion was totally tubular!

PREP TIME: 5 Minutes GRILL TIME: 30 Minutes 

INGREDIENTS

  • 1 White Potato, Large - 283 Calories
  • 3/4 Sweet Yellow Onion, Large - 51 Calories
  • 2 Tbsp. Olive Oil - 238 Calories
  • 1/2 tsp. Sea Salt - 0 Calories
  • ​1/2 tsp. Cracked Black Pepper - 3 Calories
  • ​1/4 Cup Chopped Fresh Arugula Leaves - 1 Calorie


NOTE: The arugula leaves shown on the final picture below were taken from a long stem that was flowering. ​You may substitute with the salad leaves if not available.


SERVES 2: 288 Calories per Serving

DIRECTIONS:

  1. Cut potato and onions in thick slices.​ Place in a oven safe glass dish.
  2. Coat with olive oil, salt and pepper. Microwave for 6 minutes.
  3. Place dish on a baking sheet. 
  4. Charcoal grill with cover down over indirect heat for 30 minutes.
  5. Top with leaves from a fresh arugula flower stem.


NOTE: May be completed in oven at 350°F for 30 minutes.
