The culinary inspirations behind modern meatloaf take us back to Europe and countries like Germany, Belgium and Scandinavian. In American during the 18th century Pennsylvanian Dutch were known for making this dish. However, meatloaf hit the main stream in the United States during the Industrial Revolution. The mechanical meat grinder propelled this budget friendly dish into becoming an American classic comfort dish. ​Our meatloaf recipe adds bold flavors like horseradish, ginger and arugula for a spicy rich experience that provides a unique twist to this traditional family meal. 


PREP TIME: 20 Minutes COOK TIME: 60 Minutes

MEATLOAF INGREDIENTS:

  • 2 Lbs. 85% Lean Ground Beef - 1,944 Calories
  • 1/2 Cup Whole Oats - 146 Calories
  • 1/3 Cup Whole Milk - 49 Calories
  • 2 Tbsp. Grated Horseradish - 15 Calories
  • ​3 Cloves Garlic - 15 Calories
  • 1 Small Sweet Yellow Onion - 35 Calories
  • 1 tsp. Sea Salt. - 0 Calories
  • 1 tsp. Black Pepper - 6 Calories
  • 1 Tbsp. Italian Seasonings, Dried - 12 Calories
  • 1 Tbsp. Brown Sugar - 15 Calories
  • 1 Tbsp. Ground Ginger - 19 Calories
  • 1/4 Cup Spaghetti Sauce - 70 Calories
  • 1 Cup Arugula, Chopped - 5 Calories
  • 1/3 Cup BBQ Sauce - 267 Calories
  • 1/4 Cup Parsley Flakes, Dried - 16 Calories


SERVES 6: 436 Calories per Serving

TIPS: Add all spices to a small container and blend prior to adding to the meat for even distribution of spice flavor. When forming a meatloaf use a baking dish with extra room. The loaf cooks best if it does not touch the sides. Juices from the meat need the space to drip away from the loaf. The drippings also make an excellent base for gravy.


MEATLOAF GRAVY: Use 4 tablespoons of drippings, 2 cups of beef stock and 3 tablespoons of flour to make the gravy. Place ingredients in a sauce pan, thoroughly stir. Cook on medium heat until gravy simmers about 10 minutes. Stir, occasionally. Remove from heat. Gravy will thicken upon standing.


DIRECTIONS:

  1. ​​Preheat oven to 350°F.
  2. Add ground beef, oats and milk into a large bowl.​
  3. ​Grate horseradish and add to bowl.
  4. Process or finely chop onion and garlic. Add to bowl.
  5. ​Add salt, all the spices and spaghetti sauce. Mix meat with hands until blended.
  6. ​Chop arugula. Add to meat. Mix until blended.
  7. Form a meatloaf and place into a large loaf pan (5"x10").
  8. Bake for 45 minutes. Remove from oven. Glaze meatloaf top with BBQ sauce.​
  9. Add parsley flakes. Bake for an additional 15 minutes.
  10. Remove from oven. Let rest 10 minutes prior to serving.
