Apple Muffins with Smoked Gouda Crumble
This Foxy Cuisine Original is one of those creations where I wanted to bring wine and cheese plate elements into a recipe. Instead of having apple slices, cheese and a sweet bread on a board I'm combining these elements into one amazing muffin. 🍏🍷🧀🍞  These muffins are very tasty and extremely satisfying due to their size. Feel free to use smaller muffin pan to make more than 6 or cut your muffin in half if you are watching your caloric intake. 

PREP TIME: 30 Minutes COOK TIME: 25 Minutes

MUFFIN INGREDIENTS:

  • 2 Cups All-Purpose Flour - 880 Calories
  • 3/4 Cup Granulated Sugar - 580 Calories
  • 1 tsp. Salt - 0 Calories
  • 1 Tbsp. Baking Powder - 6 Calories
  • 1/2 tsp. Nutmeg - 5 Calories
  • 1 tsp. Cinnamon - 6 Calories
  • 2 Large Eggs, Room Temperature - 144 Calories
  • 1/2 Cup Whole Milk, Room Temperature - 72 Calories
  • 1/3 Cup Canola Oil - 644 Calories
  • 1 Large Granny Smith Apple Cubed - 80 Calories


CRUMBLE INGREDIENTS:

  • 3 Tbsp. Granulated Sugar - 144 Calories​
  • 1/4 Cup All-Purpose Flour - 110 Calories
  • 2 Tbsp. Butter, Room Temperature - 204 Calories
  • 1/2 tsp. Nutmeg - 5 Calories
  • 1/4 Cup Grated Aged Smoked Gouda - 117 Calories


DIRECTIONS CRUMBLE TOPPING: Add sugar, flour, butter, nutmeg

and Gouda into small bowl. Mix with fork. Set aside and following

directions below as instructed.

SERVES 6: 499 Calories Per Muffin

MUFFIN DIRECTIONS:

  1. Preheat oven to 400°F.
  2. Grease and flour muffin cups or line with muffin liners.
  3. Mix the flour, sugar, baking powder, cinnamon, nutmeg and salt in a large bowl.
  4. In a small bowl add oil, eggs, milk and whisk for 1 minute.
  5. Make a well in the middle of the dry ingredients and pour in wet ingredients.
  6. Blend wet and dry ingredients with a spatula or spoon.
  7. Fold in two thirds diced apple pieces.
  8. Let muffin mixture rest for 15 minutes.
  9. Evenly fill a 6 count large muffin pan. 
  10. Add remaining diced apple pieces evenly on top of mixture.
  11. Sprinkle crumb topping mixture over each muffin.
  12. Bake for 20 to 25 minutes, until a toothpick comes out clean when inserted through the center of a muffin.
  13. Cool on a wire rack or serve warm.
