Tater Tot Meatloaf Cups

In honor of National Tater Tot Day!! Foxy Cuisine took time to give a little love and some recipe shout outs to the tasty tater tot! This is one of three original recipes that we featured this week in honor of the taters. These tots deserve more than one day. Stay tuned for more in “The Tater Zone.” I created the tater tot cup as great way to basket other yummy creations. Feel free to use your imagination with these tater tot cups. In this dish, we’ve taken the cups and loading them with a cheese filled meatloaf. It’s a great way to take an iconic comfort food and collide it with an American classic side dish. Enjoy!!!

PREP TIME: 45 Minutes COOK TIME: 80 Minutes

INGREDIENTS:


TATER TOP CUPS

  • 16 oz. Tater Tots, Thawed –  800 Calories
  • 1 Large Eggs – 70 Calories
  • 4 oz. Shredded Mozzarella – 360 Calories
  • 1 Tbsp. Canola Oil – 120 Calories


Yields 6: 225 Calories per Tater Cup

DIRECTIONS:


Preheat oven to 450ºF. Use a processor to break the tater tots down into a crumble. Add tater crumble to large mixing bowl.
Beat egg. Add egg to bowl. Add cheese to bowl. Mix ingredient until evening distributed throughout. Brush 6 cup non-stick large muffin pan with the canola oil. Evenly place the tater filling into the muffin pan sections. Use hands to form tater cups. Bake in over for 25 minutes until outer edges of the cups are brown and crispy. Remove from oven and let cool for 15 minutes before filling

Note: At this stage you can fill these yummy tater cups with cheeses, meats, salsas, vegetables, or anything else you wish to create with your cups. This base recipe can roll over into a whole host of creative ideas.

MEATLOAF FILLING

  • 16 oz. Ground Beef 85% Lean – 960 Calories
  • 2 Large Eggs – 140 Calories
  • 2/3 C Oats – 192 Calories
  • 4 oz. Fresh Mozzarella – 280 Calories
  • 1 tsp. Salt – 0 Calories
  • 1 Tbsp. Black Pepper – 17 Calories
  • 2 Tbsp. Oregano – 36 Calories
  • ½ C Half n Half – 157 Calories


Fills 6 Tater Cups: Adds 297 Calories per Cup

DIRECTIONS:

Beat eggs in a large bowl. Add oats, half n half, salt, pepper and oregano to bowl. Mix until all the ingredients are blended. Add ground beef to mixture and hand mix until thoroughly combined. Cut 4 oz. of fresh mozzarella into 6 equal sized pieces. Fill cooled tater cups halfway with meatloaf mixture. Add cheese in center. Fill other half of cup with remaining meatloaf mixture. Put muffin pan bake into oven. Lower heat to 350ºF. Cook for 45 minutes.

BBQ GREEN BEAN AND ONION TOPPING


  • 4 oz. Sweet Yellow Onion – 18 Calories
  • 1 ½ C Green Beans – 65 Calories
  • 6 Tbsp. BBQ Sauce – 180 Calories


Tops 6 Tater Cups: Adds 44 Calories per Cup

DIRECTIONS:

Use a processor to chop up green beans into small bits. Thinly slice sweet yellow onion into slivers. Add onions, green beans and BBQ sauce in a small bowl. After meatloaf has cooked for 45 minutes. Remove muffin pan. Top each cup with BBQ green bean and onion mixture. Add back to oven and cook for 10 more minutes.


PRESENTATION: Remove muffin pan from oven. Use a knife around the edges of each tater top cup to allow of ease of removal. Let cool 5 minutes before removal.
